WHere is a simplified version of a cocktail featured on a new cocktail list. It's a batch pre-mixed that's packed with flavours of the Christmas time, which makes it perfect for a festive gathering. Any leftover citrus syrup you can use for morning drinks, sweets, or for more rounds of the drink.
Bikini Recipe
Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place all the components in a pan, bring to a simmer, stirring until the sugar dissolves. After that, turn off the heat allowing it to cool down completely. Transfer into an clean bottle, close it and store in the refrigerator, it can be stored for around four weeks.
To make Premix: Combine every liquid ingredients into a large bottle, leave to sit for an hour, then filter it , ideally through a fine cloth, so it's completely strained.
To serve: Pour 85ml of the premix to a cocktail shaker filled with ice, and agitate lightly for about 60 seconds until cold. Pour into a cold coupe glass or a similar vessel, garnish with some cranberries and finish using a light spray with the mandarin essence over the drink.
